Armed with capital and rising demand from “flexitarians,” who now account for 40% of the U.S. population, plant-based and dairy-free operators have proliferated by developing technology and processing capabilities that deliver all the flavor, texture, and sensory appeal that were previously the domain of animal protein-based products.
